if you would have told me 5 years ago that i would be craving beets for dinner i would have told you that you were clinically insane.  its not that i don’t like veggies or anything like that, because i most certainly do – except cauliflower – but beets were never my favorite.  i have come to learn that the true problem was that i just did not care for pickled beets as much as an unpickled beet.  we had a salad at church this past weekend and karen used boiled beets, which i really liked.  this peaked my intrigue to try cooking beets at home.  will and i got two huge bunches of organic beets this past weekend at the teeter.  i got them home and was not quite sure what i was going to come up with, but i knew it would be colorful!  i got done work at a regular time tonight and decided it was beet tackle night.  i rolled into the kitchen and pulled those pretty little critters out of their bags.  they were so gorgeous i had to start snapping photos.  the more i did to them, washed them, cleaned them up, peeled them, sliced them, the prettier they became.  i decided i would roast them.  all vegetables are amazing roasted – right?  maybe even cauliflower (maybe i will try it…).  into the oven they went for about 40 minutes on 400 degrees.  they came out earthy, but as sweet as candy!  super delish!  i plated them up on some bib lettuce, orange slices, goat cheese, and a fresh little champagne vinaigrette.  all i can say is yummo!   if you have never tried this before, you better go get your self some beets right now and try this out!
